Pu-erh tea tea is produced from the larger leaves of the Camellia Sinensis plant and is most commonly grown in the Yunnan Province of China.  This tea can come in two ways - loose-leaf or compressed.   All Pu-erh leaves start the process in the same fashion by being sorted, cleaned and left to air dry for a short time.  Leaves are then fired briefly to minimize the moisture content which aides in the fermentaton process.  Pu-erh is always fermented but sometimes oxidized.
